Pea & Lemon Risotto with Norfolk Asparagus
Serves 4
Ingredients
- 300g arborio rice
- 1 litre vegetable stock
- 1 small onion, finely diced
- 2 cloves garlic, crushed
- 150g peas
- Zest and juice of 1 lemon
- 50g parmesan, grated
- 1 bunch Norfolk asparagus
- Olive oil
- Salt and pepper
Method
- Warm the stock in a saucepan and keep on a low heat.
- Gently soften the onion and garlic in olive oil for 5 minutes.
- Add the rice and stir for 1 minute until lightly coated.
- Add the stock a ladle at a time, stirring regularly until absorbed.
- After 18–20 minutes, stir through the peas, lemon zest, lemon juice and parmesan.
- Season to taste and allow to rest for 2 minutes.
- Meanwhile, blanch or lightly grill the asparagus until just tender.
- Serve the risotto topped with the Norfolk asparagus and an extra grating of parmesan.
